Meat Lovers' Fritatta




Our version of a Meat Lovers’ Frittata is a delicious egg recipe that’s great for breakfast, brunch, lunch, dinner, or anything in between! Eggs are whisked together with cream, then combined with our gluten free turkey sausage, our sugar free bacon, and our naturally cured peameal bacon to create a hearty, protein-filled treat sure to satisfy even the biggest of appetites!
Topped with cheese and served with optional sour cream and green onions, this low carb, keto-friendly dish is the perfect way to say, “Good Morning!” any day!

Ingredients and Method
Ingredients
- 1 cup ButcherBox.ca sugar free bacon, cooked and crumbled
- 2 cups ButcherBox.ca gluten free turkey sausage, cooked and crumbled
- 1 cup ButcherBox.ca peameal bacon, cooked and cubed
- 2 tbsp ButcherBox.ca Grass Fed Organic butter, unsalted
- 1 dozen eggs
- 1/2 cup heavy cream
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups shredded Cheddar cheese
- for garnish sour cream
- for garnish diced green onion
Method
- Preheat oven to 400F.
- Cook bacon, sausage and peameal in cast iron skillet, if possible, or in a heavy oven safe skillet if you don't have cast iron. Crumble bacon and chop up peameal and sausage. Set aside on paper towel to drain.
- Whisk together eggs, heavy cream, salt and pepper. Blend until no sign of whites show.
- Melt butter into skillet if needed to supplement fats from cooking meats. Pour egg mixture into skillet.
- Gently add meats to egg mixture in skillet, spreading around while pouring in.
- Distribute the shredded cheese evenly over the top of the fritatta. If desired, you can use the back of a spoon to gently press meats and cheese into egg mixture.
- Cook over medium heat until eggs are just beginning to set around the edges. The fritatta is ready for the oven when you can slip a spatual between the edge of the skillet and the egg mixture and it easily pulls away from the edges of your skillet. Most of your egg mixture should still be raw and "jiggly".
- Move your skillet to your pre heated oven and bake for 8 - 10 minutes or until eggs have completely set. Remove from oven and allow to set for a few minutes before cutting and serving.
- Delicious served hot or at room temperature. Garnish with sour cream and diced green onion, if desired.
