Method

  1. Preheat your Blackstone griddle to medium-high heat (around 400°F). Lightly grease the surface with a high heat cooking oil like avocado oil.
  2. Divide the ground beef into 12 equal-sized balls (about 2.5 oz each). Smash the balls of meat onto 12 tortillas, either with a burger press or with clean hands. Season with salt and pepper.
  3. Place a tortilla on the griddle with the beef side down, lightly press down into the griddle. and immediately press a beef ball onto the center. Let the beef cook beef-side down for 2–3 minutes until browned and nearly cooked through.
  4. Flip so the tortilla is on the griddle and the hamburger meat is facing up. Lower the heat slightly to medium-low.
  5. Top each beef patty with a thin slice of cheese. Cover with a melting dome or bowl and cook for 1–2 minutes, until cheese is fully melted.
  6. Remove from the griddle and top each taco with shredded lettuce, onion, pickles, and Big Mac sauce. Sprinkle with everything bagel seasoning or sesame seeds if desired. Serve hot!
