- 1 lb ButcherBox.ca Veal Cutlets
- to taste salt and pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 3/4 cup Italian breadcrumbs
- 1 cup shredded Parmesan cheese
- 1 teaspoon parsley flakes
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 2 tablespoons olive oil
- 1 cup marinara sauce
- 4 thick slices fresh mozzarella cheese
Method
- Preheat the oven to 375°F (190°C).
- Season both sides of cutlets with kosher salt and pepper.
- Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, 1/4 cup Parmesan cheese, parsley flakes, garlic powder, and dried basil.
- Dip each veal cutlet into the flour, coating both sides. Next, dip into the egg mixture, and then press into the breadcrumb mixture until evenly coated.
- Heat olive oil in a large skillet over medium heat. Add veal cutlets and cook for 2-3 minutes per side, until golden and crispy. Remove and transfer to a greased baking dish.
- Top each cutlet with the remaining Parmesan, spoon marinara sauce over the top, and add a slice of mozzarella cheese.
- Bake in the preheated oven for 15 minutes, then broil for 5 minutes to melt and brown the cheese.
- Garnish with fresh parsley and serve immediately with pasta or a side salad.
