Ingredients

  • 1 lb ButcherBox.ca Veal Cutlets
  • to taste salt and pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 3/4 cup Italian breadcrumbs
  • 1 cup shredded Parmesan cheese
  • 1 teaspoon parsley flakes
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil
  • 1 cup marinara sauce
  • 4 thick slices fresh mozzarella cheese

Method

  1. Preheat the oven to 375°F (190°C).
  2. Season both sides of cutlets with kosher salt and pepper.
  3. Set up a breading station with three shallow bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, 1/4 cup Parmesan cheese, parsley flakes, garlic powder, and dried basil.
  4. Dip each veal cutlet into the flour, coating both sides. Next, dip into the egg mixture, and then press into the breadcrumb mixture until evenly coated.
  5. Heat olive oil in a large skillet over medium heat. Add veal cutlets and cook for 2-3 minutes per side, until golden and crispy. Remove and transfer to a greased baking dish.
  6. Top each cutlet with the remaining Parmesan, spoon marinara sauce over the top, and add a slice of mozzarella cheese.
  7. Bake in the preheated oven for 15 minutes, then broil for 5 minutes to melt and brown the cheese.
  8. Garnish with fresh parsley and serve immediately with pasta or a side salad.
