Ingredients and Method

  1. Pour olive oil into the bottom of a slow cooker. Place pork roast into the slow cooker; pour in barbeque sauce, vinegar, and chicken broth.
  2. Stir brown sugar, yellow mustard, Worcestershire sauce, chili powder, onion, garlic, and thyme together in a small bowl to combine well. Add to slow cooker.
  3. Cover and cook on Low for 10 to 12 hours or High for 5 to 6 hours until pork shreds easily with a fork.
  4. Remove pork from the slow cooker, leaving juices in slow cooker. Shred the meat using two forks. Return shredded pork to the slow cooker, and stir to combine with juices.
  5. Butter buns and toast - in a fry pan, under the broiler, however you prefer. Place pork onto buns, garnish with more bbq sauce if you like, serve with coleslaw and pickles for additional garnish.
