Smash Burger Tacos Big Mac Style

If you’re looking for a fun weekend lunch or dinner, and one of your guilty pleasures is a Big Mac, congrats! You just found the perfect recipe! These Smash Burger Tacos, Big Mac Style, are delicious, easy to make and are thoroughly enjoyed by everyone who eats them! These were a special request for a Taco Tuesday birthday dinner, and we elevated the basic recipe by combining ButcherBox.ca's Angus lean ground beef with our lean, ractopamine-free ground pork.

Ingredients and Method
Ingredients
- 1 package ButcherBox.ca Angus lean ground beef
- 4 tbsp ketchup
- as needed avocado oil (or other high smoke point oil)
- 16 slices American cheese (or your choice)
- 1 tsp dill pickle relish (or finely diced dill pickles)
- 1 tsp yellow mustard
- 2 tsp Worcestershire sauce
- 1/2 tsp tabasco (or your favourite) hot sauce
- 1 tsp dill pickle juice
- 4 tbsp mayonnaise
- 1 package ButcherBox.ca lean ground pork
- for garnish brined dill pickles, diced
- for garnish iceberg lettuce, shredded
- 1 medium white onion, diced finely
- 1 tsp garlic powder
- 1 tsp onion powder
- to taste salt and pepper
- 8 small flour tortillas
Method
- Make burger sauce: In a small bowl whisk together mayo, ketchup, dill pickle juice, Tabasco, Worcestershire, mustard and relish, until well combined. Set aside to allow flavours to marry.
- Make burgers: In a large bowl combine ground beef, ground pork, salt, pepper, onion powder, and garlic powder, mix well. Form into 8 small balls, place a ball on top of each tortilla, smash the meat with a spatula or plate to flatten it out to cover the tortilla.
- Heat a heavy skillet or fry pan over high heat until starting to smoke, add a bit of oil to your pan and spread around.
- Place tortillas, meat side down in hot pan, don't crowd the pan, cook in batches if needed. Flatten again in the pan using spatula and pressing down on the tortilla. Cook for 1 - 2 minutes, then flip. The meat mixture and the tortilla should be browned.
- Add 2 cheese slices on top of the meat, put a lid on the pan for approximately 30 seconds to help the cheese melt.
- Remove from pan, keep warm in 240F oven, using a cooling rack or a taco stand so the tacos remain crispy.
- Repeat steps 4 - 6 until all smash tacos are done. Serve immediately with burger sauce, onions, lettuce and pickles.
