Ingredients
- 1 bag ButcherBox.ca Selva Extra Jumbo Black Tiger Shrimp, tails removed
- 2 bell peppers - assorted colours, seeded and julienned
- 1 onion, julienne slices
- 2 tbsp avocado or olive oil
- 1 tbsp chili powder
- 1 tsp cumin powder
- 1 tsp smoked paprika
- 1/2 tsp red pepper flakes
- 1 tsp garlic powder
- 3 garlic cloves, minced
- 1/4 cup cilantro, chopped
- as needed lime wedges
Method
- Heat oil in a pan over medium high heat until shimmery. Add in peppers and onions, stir to soften and lightly char.
- Add in mince garlic and shrimp, along with dry seasonings, stir to blend and continue to cook until shrimp are fully pink and opaque.
- Squeeze fresh lime over, add in some cilantro and stir to just heat through.
- Serve with warm, gluten free tortillas, lime wedges, remaining cilantro and toppings of your choice - sour cream, guacamole or avocado slices, salsa or pico de gallo, shredded cheese, or any other topping that strikes your taste buds.
