Ingredients and Method

Ingredients

  • 1 bag ButcherBox.ca Selva Extra Jumbo Black Tiger Shrimp, tails removed
  • 2 bell peppers - assorted colours, seeded and julienned
  • 1 onion, julienne slices
  • 2 tbsp avocado or olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin powder
  • 1 tsp smoked paprika
  • 1/2 tsp red pepper flakes
  • 1 tsp garlic powder
  • 3 garlic cloves, minced
  • 1/4 cup cilantro, chopped
  • as needed lime wedges

Method

  1. Heat oil in a pan over medium high heat until shimmery. Add in peppers and onions, stir to soften and lightly char.
  2. Add in mince garlic and shrimp, along with dry seasonings, stir to blend and continue to cook until shrimp are fully pink and opaque.
  3. Squeeze fresh lime over, add in some cilantro and stir to just heat through.
  4. Serve with warm, gluten free tortillas, lime wedges, remaining cilantro and toppings of your choice - sour cream, guacamole or avocado slices, salsa or pico de gallo, shredded cheese, or any other topping that strikes your taste buds.
