Ingredients and Method

Ingredients

  • 1 package ButcherBox.ca 100% grass fed grass finished stewing beef
  • 1 sweet red apple, seeded and sliced into wedges
  • 1/2 tsp fine sea salt
  • 1 tsp minced garlic
  • 1 tsp cinnamon
  • 1 tbsp fresh oregano, chopped
  • 1/4 cup good quality olive oil
  • 1/2 lemon, juiced
  • 1 tsp Hungarian paprika
  • to taste salt and pepper
  • 1 tbsp fresh Italian parsley, chopped

Method

  1. Preheat oven to 350F
  2. In a glass bowl or zippered sandwich bag, toss the stew beef in olive oil, cinnamon and garlic.
  3. Put seasoned beef into baking dish. Add apple wedges, drizzle with lemon juice and sprinkle with oregano.
  4. Bake until meat is tender, about 50 mins, occasionally basting meat with the sauce from the pan.
  5. Serve over rice (or cauli rice).
