Ingredients and Method
Ingredients
- 1 package ButcherBox.ca 100% grass fed grass finished stewing beef
- 1 sweet red apple, seeded and sliced into wedges
- 1/2 tsp fine sea salt
- 1 tsp minced garlic
- 1 tsp cinnamon
- 1 tbsp fresh oregano, chopped
- 1/4 cup good quality olive oil
- 1/2 lemon, juiced
- 1 tsp Hungarian paprika
- to taste salt and pepper
- 1 tbsp fresh Italian parsley, chopped
Method
- Preheat oven to 350F
- In a glass bowl or zippered sandwich bag, toss the stew beef in olive oil, cinnamon and garlic.
- Put seasoned beef into baking dish. Add apple wedges, drizzle with lemon juice and sprinkle with oregano.
- Bake until meat is tender, about 50 mins, occasionally basting meat with the sauce from the pan.
- Serve over rice (or cauli rice).
