Ingredients
- 2 packs ButcherBox.ca Lamb Chops
- 1 tsp coriander
- 1 tsp paprika
- 1 tsp cumin
- 1 tsp cayenne
- 1 tsp salt
- 1 tsp ground pepper
- 1 tbsp olive oil
- 1 lemon, to serve
- 1 cup full-fat yogurt
- 1 lemon, juiced
- 1 tsp harissa
- 1 tsp salt
- 1 handful fresh mint
Method
- In a small bowl, stir together the coriander, paprika, cumin, cayenne, salt and pepper. Evenly season each chop with the spice mixture and drizzle with olive oil.
- Massage the mixture into the chop and allow to marinate for 1 hour.
- Preheat a griddle pan to high, then cook the lamb for 3 minutes on each side, or until cooked to medium.
- While the lamb chops are cooking, in a small dish combine the yogurt, lemon, harissa and sea salt. Stir gently to combine and top dip with finely chopped mint
- Serve the lamb chops warms with harissa-yogurt sauce serve.
