Ingredients and Method

Ingredients

  • 2 packs ButcherBox.ca Lamb Chops
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp cayenne
  • 1 tsp salt
  • 1 tsp ground pepper
  • 1 tbsp olive oil
  • 1 lemon, to serve
  • 1 cup full-fat yogurt
  • 1 lemon, juiced
  • 1 tsp harissa
  • 1 tsp salt
  • 1 handful fresh mint

Method

  1. In a small bowl, stir together the coriander, paprika, cumin, cayenne, salt and pepper. Evenly season each chop with the spice mixture and drizzle with olive oil.
  2. Massage the mixture into the chop and allow to marinate for 1 hour.
  3. Preheat a griddle pan to high, then cook the lamb for 3 minutes on each side, or until cooked to medium.
  4. While the lamb chops are cooking, in a small dish combine the yogurt, lemon, harissa and sea salt. Stir gently to combine and top dip with finely chopped mint
  5. Serve the lamb chops warms with harissa-yogurt sauce serve.
