Maple Mustard Pork Tenderloin

Ingredients
- 1 ButcherBox.ca Pork Tenderloin
- 1/4 cup Maple Syrup
- 1/4 cup Dijon Mustard
- 4 cloves garlic, minced
- 2 tablespoons Soy Sauce
- 2 tablespoons Olive Oil
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 tablespoon Fresh Rosemary ( chopped)
Method
- Preheat your oven to 400°F (204°C).
- Pat the pork tenderloin dry with paper towels. This will help to achieve a nice sear.
- Sprinkle salt and pepper over the pork tenderloin to season it evenly.
- In an oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the pork tenderloin and sear it on all sides until brown, about 3-4 minutes per side.
- In a bowl, mix together the maple syrup, Dijon mustard, and minced garlic until well combined
- Remove the skillet from heat and brush the maple-mustard glaze over the seared pork tenderloin.
- Transfer the skillet to the preheated oven and roast for about 20-25 minutes, or until the internal temperature reaches 145°F (63°C).
- Once cooked, remove the skillet from the oven and let the pork tenderloin rest for 5-10 minutes before slicing. This will help retain the juices.
- Slice the pork tenderloin into medallions and serve with the remaining glaze drizzled over the top.
