Keto Sheet Pan Chicken Thighs with Loaded Baked Cauliflower

In a sheet pan meal, everything cooks together on one baking sheet, making prep and cleanup a breeze. This recipe is centered around ButcherBox.ca's RWA, air-chilled chicken thighs because they're flavourful and juicy, every time; and the golden brown skin is so appetizing!  The cauliflower, a keto-friendly vegetable, gets loaded with cheese, sour cream and ButcherBox.ca's sugar-free bacon -- a nod to a classic baked potato, without the carbs.

Method

  1. Preheat oven to 450 F. Line a rimmed baking sheet with parchment paper.
  2. In a medium bowl, toss chicken thighs with olive oil, thyme, 1/2 tsp salt, 1/4 tsp pepper and paprika, ensuring thighs are fully coated. Set aside and allow to marinate for at least 30 mins.
  3. Remove outer leaves from cauliflower, if there are any attached. Cut into 1/4's through the head and stem, so that florets do NOT separate.
  4. Place chicken thighs skin side up on parchment paper lined baking sheet, spacing them evenly to allow to cook properly. Drizzle with any marinade left in bowl.
  5. Place 4 pieces of cauliflower on the other side of the baking sheet, with one of the cut sides facing down. Brush each piece with cooled butter and season with salt and pepper, if desired.
  6. Lay bacon strips along edge of baking sheet and place into preheated oven. Cook until bacon is browned and crisp, about 15 - 17 mins. Remove from oven, place bacon on a paper towel lined plate to drain.
  7. Return chicken thighs and cauliflower to oven and continue to bake until thighs reach an internal temp of 165F at their thickest part and cauliflower is softened and browned.
  8. Once bacon has cooled, chop or crumble to make bacon bits.
  9. About 1 - 2 mins before removing sheet pan from oven place a slice of cheddar over each piece of cauliflower so it can melt as it finishes cooking.
  10. When serving, add sour cream, bacon bits and chives to top off cauliflower.
