Method

  1. Melt 8 tbsp of butter in a small saucepan over medium-low heat. Cook, swirling occasionally, until golden brown and nutty-smelling - approximately 8 - 10 minutes.
  2. Add chopped sage and cook until crispy, about 5 - 10 seconds, remove from heat, set aside.
  3. Melt remaining 2 tbsp of butter in a medium skillet over medium-high heat. Add sausage and cook, breaking into small pieces until about half of pink is gone. Add tomatoes and continue to cook until sausage meat is cooked through and tomatoes are bursting - 10 to 12 minutes total. Transfer to a plate.
  4. Pour off all but about 2 tbsp of fat from skillet, reduce heat to medium. Add gnocchi and spread so it is in a single layer - work in batches if needed.
  5. Cook without stirring for about 2 minutes to brown one side. Toss and continue cooking to complete browning and get a little crispy, another 3 - 4 minutes.
  6. Add sage butter, sausage mixture and spinach and cook until warmed through and spinach is wilting - about 1 - 2 minutes.
  7. Serve garnished with chopped parsley and shredded cheese.
