  1. Melt 1 tbsp butter in a skillet over medium heat.
  2. Add olive oil and garlic to skillet, cook for about 1 minute, until garlic is golden and fragrant.
  3. Add shrimp to skillet, toss to coat in butter mixture, spread in a single layer so all will cook evenly. You may have to do this in batches to ensure single layer cooking.
  4. Cook for about 2 minutes, turn over and cook for approx 2 - 3 minutes more. Shrimp are done when they begin to curl and turn white/opaque. **be sure not to overcook, or the shrimp will become rubbery
  5. Using tongs, lift shrimp to serving dish and cover to keep warm.
  6. Melt remaining butter in skillet, add lemon juice, zest and wine or broth, stir to combine well.
  7. Allow sauce to simmer over low heat until it begins to thicken slightly, about 5 minutes.
  8. Return shrimp to pan, toss to coat well in sauce, pour over pasta in serving dish, toss to coat pasta, garnish with chopped parsley and serve immediately.
  9. **If using pasta, reserve 1/4 cup of the pasta water to stir into your sauce in step 7 for a bit more thickening.
