Ingredients and Method
Ingredients
- 2 bags ButcherBox.ca Argentinian shrimp (I remove the shells but leave the tails on for aesthetics)
- 3 tbsp ButcherBox.ca unsalted butter
- 1 tbsp good quality olive oil
- 4 garlic cloves pressed or minced
- 2 tbsp fresh lemon juice (basically juice from one medium sized lemon)
- lemon zest
- 1/4 cup white wine
- 3 cups cooked pasta or zoodles (you can use your choice of pasta, or any noodles you wish)
Method
- Melt 1 tbsp butter in a skillet over medium heat.
- Add olive oil and garlic to skillet, cook for about 1 minute, until garlic is golden and fragrant.
- Add shrimp to skillet, toss to coat in butter mixture, spread in a single layer so all will cook evenly. You may have to do this in batches to ensure single layer cooking.
- Cook for about 2 minutes, turn over and cook for approx 2 - 3 minutes more. Shrimp are done when they begin to curl and turn white/opaque. **be sure not to overcook, or the shrimp will become rubbery
- Using tongs, lift shrimp to serving dish and cover to keep warm.
- Melt remaining butter in skillet, add lemon juice, zest and wine or broth, stir to combine well.
- Allow sauce to simmer over low heat until it begins to thicken slightly, about 5 minutes.
- Return shrimp to pan, toss to coat well in sauce, pour over pasta in serving dish, toss to coat pasta, garnish with chopped parsley and serve immediately.
- **If using pasta, reserve 1/4 cup of the pasta water to stir into your sauce in step 7 for a bit more thickening.
