Ingredients and Method

- 1 ButcherBox.ca whole chicken
- ⅓ cup dark brown sugar
- 2 tbsp ancho chili powder
- 2 tbsp smoked paprika
- 2 tsp dry mustard
- to taste Fresh ground black pepper
- ½ can beer (approx 12 oz)
Method
- Fire up the grill - get the temperature up to about 375F (medium high) - this is an important step, especially in the colder months.
- Mix the dry spices together in a bowl or jar, make sure they are well blended. I usually make extra and keep in a small jar - ready to go for next time!
- Place your half can of beer in the center of a plate for stability.
- Rinse your ButcherBox.ca whole chicken under cold water, pat dry very well with paper towels. Fit the chicken (with the legs down) over the beer can, keep standing up.
- Sprinkle approximately 1 tsp of your seasoning mix into the top cavity of the chicken - the beer may foam up a bit if seasoning falls into the can, this is good - it will help ensure the chicken is seasoned from the inside out!
- Rub remaining seasoning mix over the entire surface of the chicken, get some under the skin where you can, too!
- Place the chicken, standing on the can, directly on the surface of your grill - if you need added stability, you can use a tinfoil pie plate or bbq tray underneath, or there are also chicken stands available if you prefer.
- Close the lid and bbq the chicken until the juices run clear and an instant read thermometer (inserted in the thickest part of the meat - which is at the thigh, near the bone) should register 180F.
- Remove the chicken from the grill, remove from the beer can to a platter, cover with a doubled up sheet of aluminum foil (shiny side in) and let rest in an area it can stay warm for about 10 minutes before slicing. Discard the beer and the can.
