Succotash Inspired Gnocchi
inspired by delicious succotash, with distinctly summery vibes thanks to the flavours and colours - this appealing dish is extra hearty and full of fresh flavours. Though this rendition doesn't include beans, we think the chewy boiled gnocchi are even better for a unique version! Whether a side dish or as a main entree, it tastes even better than it looks!

Ingredients and Method
Ingredients
- 4- 6 slices ButcherBox.ca sugar-free butcher bacon, chopped
- 3 tsp ButcherBox.ca grass fed butter, salted (2 tbsp melted)
- for pasta water Kosher salt
- 1 package (17.5 oz) gnocchi
- 1 tbsp extra-virgin olive oil
- 1 medium zucchini, quartered lengthwise, cut into 1/2" pieces
- to taste freshly ground black pepper
- 1/2 medium onion, chopped
- 1 cup frozen corn niblets, thawed and patted dry
- 1 tbsp fresh thyme leaves
- 1/2 lemon, juiced
- for garnish fresh basil leaves, torn
Method
- In a large pot of boiling water with Kosher salt, cook gnocchi according to package directions. Drain and set aside.
- In a large skillet over medium heat, heat oil. Once shimmery, add zucchini and cook, stirring occasionally, until tender and golden, about 10 minutes; season with salt and pepper. Transfer zucchini to a plate.
- In the same skillet, still using medium heat, cook bacon, stirring occasionally, until crispy, about 10 minutes. Transfer bacon to a paper towel-lined plate.
- Empty all but approx 1 tbsp of bacon fat from your skillet, keeping it at medium heat. Add onion and bell pepper; season with salt and pepper. Cook, stirring occasionally, until onions and peppers are softened, about 7 minutes.
- Add corn niblets and thyme leaves. Continue to cook until warmed through, about 3 minutes more. Add butter and cooked gnocchi and heat, tossing or stirring, until butter is melted. Remove from heat and stir in lemon juice, zucchini, and three-quarters of the cooked bacon, until well blended.
- If a side dish, place in serving bowl; if main course, serve on plates or pasta bowls. Top with torn basil leaves and remaining cooked bacon.
