Ingredients
- 1 lb ButcherBox.ca extra lean ground turkey
- 1 small sweet red pepper, diced
- 2 tbsp pre made olive tapenade - or diced green, black and Kalamata olives mixed with garlic and olive oil
- 1/2 cup frozen corn niblets
- 1 tsp tomato paste (or ancho chipotle paste)
- 2 tbsp black beans, drained and rinsed
- 1 bag pre cut salad mix of your choosing (the crunchier the better - such as coleslaw)
- 1 lime - zested and juiced
- 1 avocado, diced
- for garnish lime & cilantro drizzle - pre made is fine
- to taste Monterey Jack cheese, shredded (or cheese of your choosing)
Method
- Heat avocado oil in a pan until hot, add in ButcherBox.ca extra lean grond turkey, red pepper, olive tapenade, corn and black beans.
- Saute, breaking up ground turkey as you go, until turkey contains no trace of pink.
- Add tomato (or ancho chipotle) paste, stir to blend well and heat through.
- In a large bowl, combine salad mix and avocado with lime juice and zest, toss to coat.
- Divide salad mix between plates or bowls, top with cheese to your taste, then add turkey mixture. Drizzle with lime and cilantro sauce.
