Steak Chili

Ingredients and Method
Ingredients
- 4 each ButcherBox.ca AAA top sirloin steak, baseball cut - cut into 1" bite sized pieces
- 3 tbsp chili powder
- 1 can (14 oz) kidney beans, drained and rinsed
- 2 tbsp liquid honey
- 1 can (28 oz) crushed tomatoes
- 1 tbsp cumin powder
- 1 tbsp dried oregano
- 2 tbsp smoked paprika
- 1 can (5.5 oz) tomato paste
- 3 cups ButcherBox.ca 100% grass fed beef bone broth
- 1 chipotle pepper in adobo sauce, minced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 1 large onion, minced
- to taste Kosher salt and freshly cracked black pepper
- 2 tbsp extra virgin olive oil, divided
- for garnish diced red onion, chopped fresh cilantro, nacho chips
Method
- For best browing, bring beef to room temperature and pat dry with paper towel, season with salt and pepper.
- Heat 1 tbsp olive oil in a large pot over medium-high heat until shimmery. Add 1/2 the beef and brown well on all sides. Remove from pan to plate or bowl and repeat with remaining beef, adding more oil if needed. Keep all browned beef aside for the moment.
- Add remaining oil to pot, with onion and cook until it starts to brown and soften, around 5 minutes. Add celery and garlic, cook for about 2 minutes more, until fragrant.
- Push veggies to side of pot and add tomato paste and chipotle pepper (with sauce). Let cook for a couple of minutes until fragrant. Add chili powder, paprika, cumin and oregano. Mix well to distribute spices and veggies through tomato paste.
- Add beef broth to pot, stirring to deglaze (scrape up brown bits). Add crushed tomatoes, honey and beef back to pot. Bring just to a boil, reduce heat to low.
- Simmer on low, stirring occasionally, for about 2 hours. Add beans just before serving, stir through and heat to warm them through. Season to taste with salt and pepper if desired.
- Ready to serve with your choice of garnishes! We use diced red onion and fresh cilantro to bring out the beefy goodness and nacho chips for crunch - but you can also use shredded cheddar, sour cream, guacamole, whatever you'd like!
