Ingredients
- 6 slices ButcherBox.ca sugar-free bacon, chopped
- 1 tbsp ButcherBox.ca grass fed butter, salted
- 1 1/2 cups shredded Gruyere cheese (swiss is a good substitute)
- 1 1/2 cups cream
- 1 onion, finely diced
- 2 - 3 tsp fresh thyme leaves
- to taste salt and freshly cracked black pepper
- 2 - 3 lb russet potatoes, thinly sliced (Yukon Golds work well, too)
Method
- Preheat oven to 375F. Grease a 9" cast iron skillet or 9" round glass baking pan.
- In a skillet over medium heat, melt butter, add bacon and saute until starting to brown. Add minced onion and continue to cook until bacon is crisp and onion is golden. Remove from pan and drain.
- In a medium to large bowl, combine cream, gruyere (or swiss) cheese, thyme leaves, bacon and onion mixture. Season with salt and pepper and stir to blend well.
- Add in potato slices and mix to ensure potato slices are well coated.
- Arrange in your pan standing on edge, using a spiral pattern, this is what gives the hasselback look to the pan when cooked.
- Cook in prehated oven until potatoes are fork tender, about 1 hour and 30 minutes, longer if needed.
