Sausages with Apples and Caramelized Onion

Ingredients and Method
Ingredients
- 2 packs (8 pieces) ButcherBox.ca gluten free, salt and pepper turkey sausage, cut into coins
- 4 tbsp ButcherBox.ca 100% grass fed butter, unsalted
- 3 yellow onions, cut in 1/4" slices
- to taste salt and pepper
- 1 bay leaf
- 2 whole cloves (or use 1/4 tsp ground cloves)
- 3 all spice berries (or 1/4 tsp ground all spice)
- 1/2 tsp caraway seeds
- 1 sprig fresh thyme
- 4 large apples, tart flavoured - such as Granny Smith, peeled and cut into 1/2" slices
- for garnish fresh Italian parsley sprigs
Method
- Melt 2 tbsp butter over medium high heat in a large cast iron or other heavy bottomed skillet. When melted, add onions and season generously with salt and pepper, stir to fully coat with melted butter. Add bay leaf, cloves, all spice, caraway seeds and thyme. Cook, stirring frequently, until onions are softened and browned, approximately 10 minutes.
- Adjust heat lower as needed to prevent onions from browning too quickly and tasting burnt. Once browned, remove from pan and set aside.
- Add 2 more tbsp butter to your skillet, once melted, add apple slices. Raise heat back to medium high and cook apples, turning them, to brown on both sides. Approximately 2 - 3 minutes per side. Remove to dish containing onions.
- Reduce heat to medium and add sausage coins to your skillet. Allow sausage coins to gradually brown on the one side, approximately 6 - 8 minutes. Check progress, and reduce heat if needed to avoid burning.
- Turn sausage coins over, add 1/2 cup water to your skillet. Continue to cook until water evaporates, then continue to let the sausages brown for approximately 5 more minutes.
- **Don't rush cooking the sausages, this can cause them to burst out of the casing.
- Return onion and apples to pan, heat everything through. Serve on a platter, garnished with parsly sprigs.
