Ingredients and Method
Ingredients
- 1 package ButcherBox.ca sugar-free butcher bacon, chopped
- 1/2 package ButcherBox.ca maple breakfast turkey sausages, casing removed and crumbled
- 2 tbsp Butcherbox.ca 100% grass fed butter, salted
- 4 large Russet potatoes, peeled and cubed
- 1 small onion, finely chopped
- 1 cup old Cheddar cheese, shredded
- 1/4 cup sour cream
- 1/2 cup milk
- 1/2 cup frozen hash brown cubed potatoes, thawed
- 1 tbsp fresh Italian parsley, chopped, for garnish
- 1/2 cup gluten free breadcrumbs, for garnish (optional)
- to taste Kosher salt and freshly cracked black pepper
Method
- Preheat oven to 375F. Grease a loaf pan.
- Prepare the potatoes: Boil the potatoes in salted water for 10 - 12 minutes or until tender. Drain and return to pot.
- Cook Bacon and Sausage: Heat a large skillet over medium-high heat, add bacon and cook until crispy, about 5 minutes. Remove from pan and set aside, reserving fat. Add sausage crumbles to th pan with chopped onion, until sausage is browned and the onion is softened, about 7 - 8 minutes. Drain, add bacon back to pan and set aside.
- Mash the potatoes with butter, sour cream and milk until smooth, stir in thawed hash browns to mix well. Season with salt and pepper, to taste.
- Gently fold the bacon and sausage mixture, along with shredded cheddar into the mashed potatoes. Stir until well combined and everything is fully coated.
- Pour the mixture into your greased loaf pan, spread out to ensure even and smooth the top. Garnish with gluten free bread crumbs if desired, for added crispness to the top of the loaf.
- Bake for 20 - 25 minutes, or until top is golden brown. Allow to cool slightly before slicing, garnish with chopped parsley and more bacon bits, if desired.
