- For the Ribs
- 1 duBreton St. Louis Style Pork Side Ribs
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp black pepper
- 1 tsp kosher salt
- ½ tsp cayenne pepper (optional)
- Maple Bourbon BBQ Glaze
- ½ cup Canadian maple syrup
- ¼ cup bourbon
- ½ cup BBQ sauce
- 2 tbsp apple cider vinegar
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
Method
- Prepare the Ribs Remove the membrane from the underside of the ribs using a butter knife and paper towel. This helps the seasoning penetrate the meat and improves tenderness during cooking.
- Apply the Dry Rub Combine brown sugar, smoked paprika, garlic powder, onion powder, pepper, salt, and cayenne. Coat the ribs evenly on both sides and allow them to rest for 30 minutes.
- Slow Roast Preheat the oven to 300°F (150°C). Place the ribs on a baking sheet lined with foil. Cover tightly with another sheet of foil and bake for 2½ hours. Low-and-slow cooking allows the connective tissue to break down, producing tender, juicy ribs.
- Make the Maple Bourbon Glaze While the ribs cook, combine maple syrup, bourbon, BBQ sauce, apple cider vinegar, Dijon mustard, and garlic in a saucepan. Simmer over medium heat for 10 minutes until slightly thickened.
- Finish on the Grill Preheat the BBQ to medium heat. Brush the ribs generously with glaze and grill for 10–15 minutes, turning occasionally and brushing with additional glaze until caramelized and slightly charred.
- Rest and Serve Allow the ribs to rest for 10 minutes before slicing between the bones. Serve with extra glaze on the side.
