Ingredients

  • 1 Pack ButcherBox.ca Italian Sausage
  • 1 Tbsp olive oil
  • 1 onion, thinly sliced
  • 1 bell pepper, thinly sliced
  • 1 zucchini, sliced into half-moons
  • 2 cloves garlic, minced
  • 1 Tsp dried oregano
  • to taste salt and pepper
  • 1/2 cup marinara sauce (or tomato sauce)
  • 1 cup shredded mozzarella cheese
  • 2 tbsp grated Parmesan cheese
  • optional garnish Fresh basil or parsley
  • optional for serving 3 hoagie rolls

Method

  1. Prepare the Sausages:
  2. Heat a large skillet or grill pan over medium heat. Add the sausages and cook, turning occasionally, for about 10-12 minutes or until they are cooked through and browned on all sides. Once done, remove from the pan and set aside
  3. Cook the Veggies:
  4. In the same skillet, add the olive oil and sauté the onion, bell pepper, and zucchini over medium heat for 5-7 minutes, until softened. Add the garlic, oregano, salt, and pepper, and cook for another 1-2 minutes until fragrant.
  5. Add the Sauce:
  6. Lower the heat and pour in the marinara sauce, stirring to combine. Let it simmer for 3-4 minutes.
  7. Load the Sausages:
  8. Cut the sausages into halves or leave them whole, depending on your preference. Add the sausages back into the skillet, nestling them into the sauce and veggies.
  9. Melt the Cheese:
  10. Sprinkle the shredded mozzarella and grated Parmesan cheese over the sausages. Cover the skillet and cook for 2-3 minutes until the cheese is melted and bubbly.
  11. Serve:
  12. Garnish with fresh basil or parsley, if desired. Serve the loaded sausages as-is or in hoagie rolls for a sandwich-style meal.
