- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- 1 teaspoon chipotle powder (adjust to taste)
- 1/4 cup honey
- 2 tablespoons soy sauce
- to taste salt and pepper
- 6 slider buns
- Optional toppings sliced avocado, pickled red onions, fresh cilantro, or jalapeños
Method
- Prep the Chicken: Trim any excess fat from the chicken thighs and pat them dry with paper towels.
- Season the Chicken: In a bowl, combine garlic powder, onion powder, smoked paprika, chipotle powder, salt, and pepper. Rub this mixture evenly over the chicken thighs.
- Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the seasoned chicken thighs and cook for about 5-7 minutes per side, or until cooked through and golden brown
- Make the Sauce: In a small bowl, whisk together honey and soy sauce. Pour this mixture over the cooked chicken in the skillet and let it simmer for 2-3 minutes, allowing the chicken to absorb the flavors.
- Shred the Chicken: Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet and toss it in the honey chipotle sauce until fully coated.
- Prepare the Buns: While the chicken cools slightly, toast the slider buns in a separate pan or oven until golden brown.
- Assemble the Sliders: Spoon a generous amount of the honey chipotle chicken onto the bottom half of each slider bun. Add your choice of toppings and place the top half of the bun on each slider.
