Grilled Chicken Taco Pizzas

Ingredients and Method

Ingredients

  • 2 tbsp onion powder
  • 2 tbsp garlic powder
  • 1 tbsp chili powder
  • 1 tsp dried oregano
  • 1 tsp cayenne pepper
  • 1 tsp ground cumin
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • 2 -3 ButcherBox.ca air chilled boneless skinless chicken breasts
  • 1/4 cup olive oil, plus more for brushing pizza crust
  • 1 16 oz tube pizza dough
  • for dusting all purpose (or gluten free) flour for dusting
  • 1 cup shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1 avocado
  • 1 lime, juiced
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 tbsp red onion, diced
  • to taste Kosher salt
  • to taste freshly ground black pepper
  • 1 cup salsa (fresh, if available)
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped

Method

  1. Make taco seasoning - mix onion powder, garlic powder, chili powder, dried oregano, cayenne pepper and ground cumin (from top of ingredients list) together to blend well. Season to taste with Kosher salt and black pepper. Set aside to allow flavours to marry.
  2. Prepare the chicken breast: Mix 2 tablespoons of the taco seasoning and the olive oil in a shallow bowl. Pound each chicken breast between 2 pieces of plastic wrap to be about 1/4 inch thick. Add the chicken to the bowl, turning to coat. Cover tightly and marinate, refrigerated, for at least 30 minutes.
  3. Preheat a grill to medium high. Grill the chicken breasts until cooked through, about 4 minutes per side (internal temp of 165F). Remove to cutting board or platter, let cool, then cut into bite-size pieces.
  4. Divide the dough into 3 pieces. Roll out each on a floured surface into an 8-inch round. Brush with olive oil and sprinkle with taco seasoning on both sides, then grill until crisp, 3 to 5 minutes per side; remove from the grill.
  5. Mix the cheeses in a bowl, then sprinkle on the crusts and top with the chicken. Return the pizzas to the grill, and cook until the cheese is melted, about 5 minutes. Meanwhile, mix the avocado, lime juice, cumin, chili powder (from the bottom of the ingredients list), red onion, and salt and pepper to taste. Top the pizzas with the avocado mixture, salsa, sour cream and cilantro.
  6. For a little extra flavour make a drizzle for the pizzas by putting 1 avocado, 1 small bunch of cilantro, a pinch of salt, 1/2 tsp minced garlic, half of a jalapeno pepper that has been seeded into a blender and blend until smooth. Add sour cream, to achieve desired creaminess and drizzle over pizzas just before serving.
