- 4 ButcherBox.ca Chicken Breasts
- 2 tablespoons olive oil
- 1 cup heavy cream
- ½ cup ButcherBox.ca chicken broth
- ½ cup grated Parmesan cheese
- 1 cup fresh spinach
- ½ cup sun-dried tomatoes chopped
- 4 cloves garlic minced
- 1 teaspoon Italian seasoning
- to taste Salt and freshly cracked pepper
Method
- Season the chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 5-7 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
- Pour in the chicken broth and heavy cream, stirring to combine. Bring to a simmer.
- Add the Parmesan cheese and stir until melted and the sauce starts to thicken.
- Toss in the sun-dried tomatoes and spinach, cooking until the spinach wilts.
- Return the chicken to the skillet, spooning the sauce over it. Let it simmer for 2-3 minutes to reheat the chicken and meld the flavors.
