Coconut Lime Cod with Avocado Salsa

Ingredients and Method
Ingredients
- 4 ButcherBox.ca wild Icelandic cod fillets
- 2 tbsp ButcherBox.ca 100% grass fed butter, salted
- 3 limes, juiced, divided (1 zested)
- 1/2 cup coconut milk
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 tsp red pepper flakes
- 1 bunch fresh cilantro, chopped, divided
- 1 large avocado, diced
- 1/2 cup cherry tomatoes, quartered
- 1/4 cup red onion, finely diced
- to taste salt and pepper
Method
- Marinate the fish: In a shallow dish combine lime zest, juice from 2 limes, coconut milk, olive oil, minced garlic, red pepper flakes, mix well. Season with salt and pepper. Add the cod filets to the marinade, turning to coat well. Cover tightly and let marinate for 15 - 20 minutes, no longer than 1/2 an hour.
- Make the salsa: In a glass bowl combine diced avocado, cherry tomatoes, red onion, juice from 1 lime, 1/2 the cilantro. Gently toss to coat well, season with salt and pepper. Set aside to let flavours blend.
- Melt butter in a large skillet over medium high heat. Remove cod filets from marinade, shaking gently to remove any excess. Place filets in skillet, cooking for 3 - 4 minutes per side, or until fish is opaque and flakes easily with a fork.
- Plate each filet and top with a generous scoop of the avocado salsa, garnish with remaining cilantro. Delicious when accompanied by lime and cilantro rice!
