Ingredients and Method

Ingredients

  • 2 each ButcherBox.ca air chilled boneless skinless chicken breast
  • 1 tbsp ButcherBox.ca Organic, Grass Fed Butter, salted
  • 1 tbsp water
  • 1 tbsp avocado oil
  • 1 onion, chopped or thin slices
  • 1.5 cup stir fry veg - you can slice our own, or in a hurry, frozen pre mix is great
  • 2 cups cooked rice of your choosing - use cauli rice for gluten free options
  • 1 tbsp fresh ginger, grated
  • 1 tbsp soy sauce (or gluten-free tamari)
  • 1 tsp ground black pepper
  • 1 large egg

Method

  1. Heat avocado oil in a pan until hot, add chicken and stir fry quickly, until almost fully cooked - add in grated ginger and black pepper just at end to heat and blend flavours.⁠
  2. Melt butter in a separate pan, stir in veg mixture and onion - stir fry for a few minutes so veg is tender crisp and colourful.
  3. Add chicken mixture, then add egg and quickly stir fry to scramble egg and blend all ingredients. ⁠
  4. Stir in water and rice, blend well. Add soy sauce and stir again, to meld flavours. Serve - you can garnish with sliced green onion and sesame seeds if you wish.⁠
