- 2 ButcherBox.ca Chicken Breasts, halved and pounded thin
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1 cup Italian breadcrumbs
- ½ cup grated Parmesan cheese
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp black pepper
- 3 tbsp olive oil (for frying)
- 4 slices fresh mozzarella cheese
- 1 cup cherry tomatoes, halved
- 2 tbsp olive oil
- ¼ cup fresh basil, chopped
- 2 tbsp balsamic glaze
Method
- Pound chicken breasts to an even thickness. Season lightly with salt and pepper.
- Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with Parmesan and garlic powder.
- Dredge chicken in flour → egg → breadcrumb mixture.
- Heat olive oil in a large skillet over medium heat. Fry chicken cutlets 3–4 minutes per side until crispy and golden brown.
- Place mozzarella slices on the hot chicken and cover the pan for 1–2 minutes until melted.
- In another pan, sauté cherry tomatoes in olive oil for 2–3 minutes until slightly blistered.
- Top each chicken cutlet with sautéed tomatoes and chopped basil.
- Drizzle balsamic glaze over the top.
