Ingredients

  • 2 ButcherBox.ca Chicken Breasts, halved and pounded thin
  • ½ cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup Italian breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp olive oil (for frying)
  • 4 slices fresh mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • ¼ cup fresh basil, chopped
  • 2 tbsp balsamic glaze

Method

  1. Pound chicken breasts to an even thickness. Season lightly with salt and pepper.
  2. Set up three bowls: flour, beaten eggs, and breadcrumbs mixed with Parmesan and garlic powder.
  3. Dredge chicken in flour → egg → breadcrumb mixture.
  4. Heat olive oil in a large skillet over medium heat. Fry chicken cutlets 3–4 minutes per side until crispy and golden brown.
  5. Place mozzarella slices on the hot chicken and cover the pan for 1–2 minutes until melted.
  6. In another pan, sauté cherry tomatoes in olive oil for 2–3 minutes until slightly blistered.
  7. Top each chicken cutlet with sautéed tomatoes and chopped basil.
  8. Drizzle balsamic glaze over the top.
