Beef Curry

Ingredients and Method
Ingredients
- 1 ButcherBox.ca AAA Sirloin Roast, cut into 3" cubes
- 2 tbsp avocado oil, divided
- 1 red onion, sliced 1/4" thick
- 1 large red pepper, quartered lengthwise, then julienne sliced cross wise
- to taste Kosher salt and freshly cracked black pepper
- 1 (14.5 oz) can coconut milk, well-shaken
- 3 tbsp Thai red curry paste
- for serving cooked cauli rice
- for garnish lime wedges
- for garnish fresh cilantro, chopped
- for garnish red chile, sliced, seeds in for heat
Method
- Preheat oven to 350F
- Heat 1 tbsp oil in Dutch oven or other ovenproof pan. Add onion and red pepper, season with salt and pepper and saute until just softening, about 5 minutes. Remove to plate, set aside.
- Add remaining oil to pan, season beef with salt and pepper, add to pan and saute until browned on all sides, about 5 minutes.
- Whisk together coconut milk and curry paste until well blended. Add to pot with beef, scraping up any brown bits.
- Cover and place into pre heated oven. Cook for about 2 hours, until beef easily pulls apart.
- Remove from oven, shred beef, using 2 forks. Add red pepper and onion mixture back to pot, mix well.
- Serve over cauli rice, garnish with lime wedges, cilantro and red chile slices, if desired.
