Ingredients

  • 2 lbs ButcherBox.ca Stew Beef
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 cup pearl barley
  • 6 Cups ButcherBox.ca Beef Broth
  • 2 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 tsp thyme
  • 1 bay leaf
  • to taste salt and pepper

Method

  1. Heat oil in a large pot or Dutch oven over medium-high heat.
  2. Season and brown beef in batches, about 5–6 minutes per batch. Remove and set aside.
  3. Add onion, carrots, celery, and garlic. Cook 5 minutes, scraping up brown bits.
  4. Stir in tomato paste, cooking 1–2 minutes to deepen flavour.
  5. Add broth, Worcestershire, thyme, bay leaf, and barley. Return beef to the pot.
  6. Bring to a boil, then reduce to a gentle simmer. Cover and cook 1½ to 2 hours until beef and barley are tender.
  7. Remove bay leaf, taste, and adjust salt and pepper.
  8. Serve hot, optionally topped with parsley or a drizzle of olive oil.
