Ingredients
- 12 to 18 strips ButcherBox.ca Bacon
- 1 tsp ButcherBox.ca unsalted butter
- 6 Large Eggs
- to taste Freshly ground pepper
- 1/4 cup Shredded old cheddar cheese (or cheese of your choice)
Method
- Preheat oven to 325F.
- In a large skillet, cook Butcherbox.ca bacon until partially cooked, but not crispy. Drain on paper towels.
- Lightly grease 6 muffin cups using ButcherBox.ca unsalted butter. Cut 6 bacon strips in half crosswise. Line bottom of each muffin cup with 2 halves.
- Line sides of muffin cups with 1 or 2 additional strips of bacon to form a cup.
- Sprinkle cheese into bottom of cup, break an egg into each cup.
- Bake until whites are completely set and yolks begin to thicken but are not hard - approx 12 - 18 minutes.
- Sprinkle each cup with pepper.
