Roasted Bone Marrow with Butcher Beef Marrow Bones




  1. Fill a large bowl to the halfway point with ice water, adding 1 tsp coarse sea salt per 1 cup water.
  2. Add Butcher beef marrow bones and refrigerate for 12 - 24 hours, changing the water and salt bath every 4 hours.
  3. Drain, pat dry, cover and refrigerate until you are ready to roast - be sure to roast the soaked marrow bones within 24 hours.
  4. Preheat oven to 450F
  5. Place drained and dried marrow bones in a roasting pan, standing up.  Sprinkle with kosher or himalayan pink salt if desired.  Roast for 15 - 25 minutes until marrow is puffed up and warmed through.
  6. To test for doneness, insert a metal skewer into the marrow, then touch to your wrist to gauge temperature, make sure it is very hot.  You should feel no resistance when inserting the skewer, and be able to see some leakage of marrow.
  7. Serve immediately with a spoon for scooping, along with some crostini.
