Air Chilled, Spatchcock Chicken - Not Available In All Areas
A great way to have Portuguese style chicken at home! Our air chilled, naturally raised, free range, grain fed whole chicken is butterflied or cut spatchcock style (the backbone is removed and the chicken is flattened out), then marinated in a blend of seasonings in the Portuguese style!
Simply thaw, place in a 425F oven and cook, flipping over after about 15 minutes until a temperature probe in the leg of the chicken reads 165F – then place under the broiler for a few minutes to crisp up the skin…YUMMY!
All our poultry is air chilled - this is the safest, healthiest, cleanest way to process chicken. There is never any contact between the birds, so no cross contamination can occur. The birds are chilled using air chambers, not water, so no water is absorbed and there is no chlorine or bleach used, as there is when chicken is water chilled. While air chilling takes more time and is a more costly method, we passionately believe it is the best chicken you will ever taste. This is the way chicken should be!
Cooking tip– Start the chicken by cooking with the skin side down and wings tucked under to ensure the meaty parts are cooked all the way through; and always let your cooked chicken rest for about 5 minutes so all the juices stay in.
